Spiced Rose Hip & Apple Cup
A warm, spiced cup in the spirit of mulled wine — with rose hips and apple, and no wine at all.
This is what simmers on the stove from the first cold evening in October until the end of winter. It has everything you want from mulled wine — warmth, spice, the smell filling the house — and none of the alcohol, so everyone at the table can have a cup, from the smallest child up.
Rose hips give it a deep red colour and a sour brightness that keeps it from being too sweet.

Method
Put the apple juice, rose hips, spices, ginger and orange peel in a pan.
Warm over a low heat and keep it just below a simmer for 20–25 minutes. Don't let it boil hard — the spices turn bitter and the apple loses its freshness.
Strain through a sieve lined with muslin or a coffee filter. This matters: it catches the fine hairs from the rose hips.
Taste, and sweeten with a little honey or the syrup left from candying peel.
Serve in small cups with a thin slice of orange.
Notes
Making ahead: strain and keep in the fridge for up to three days; reheat gently.
For a crowd: double it and keep it warm in a slow cooker on low.
A brighter version: add a cup of strong hibiscus tea for a deeper ruby colour.
